3-Day Trip Away - The Menu

As if cooking from scratch and eating a grain-free diet isn’t enough for the busy levels, we are also people who love a trip away from home. And this, obviously, presents some major issues when it comes to fathoming ‘easy’ meals for my family.
If you live in a country that has no safe grain-free precooked frozen meals, like Zimbabwe, then going away becomes tricky. And going away with half the group being full-on gluten fanatics … makes it even trickier.
Self-Catering is the way to go. I don’t have a clue how we’d navigate staying in a hotel or lodge, where we couldn’t bring our own food. I’m sure there is a way around this, especially in more progressive countries, but over here it’s a no-no, for now.
So, as the title indicates, we are about to go away for a 3-day trip. A family member is taking us away and it has come at the absolute best time for us. We are so excited to get away from the madness that this year has been. I thought I’d share my plan with you, in case it helps.
1. Meal Planning Helps … A lot.
I find meal planning helps me a lot. I’m able to make lists of what I need to pack, based on the meal plan. We can get safe bacon here(that has been brined with the correct salt etc.) In this case, we won’t be taking safe bacon, though. It’ll be store-bought and only my husband and my in-laws will eat it. The one we can get that I could eat doesn’t fit the budget at the moment.
The pancakes have been a game-changer for me. I got the recipe from a friend and I want to share it soon. I use them as a bread substitute and they hit the spot. They don’t fall apart, they have a good taste, they can hold sauces = glorious.
2. Then comes the extras
You’re seeing a lot of homemade here, aren’t you? Me too. If you look at the pic at the top of this article, you’ll see yoghurt, strawberry jam and granadilla cordial on the go. I’ve let my stocks of everything run pretty low recently, so this trip is spurring me on to stock up again. The cordial and jam will make bottles and bottles, which will go into my pantry and be used over the next few months.
These are the things that will allow my family to enjoy themselves around the table, but perhaps yours don’t need as many options as above. Pack what is best for your tribe.
3. Someone in your corner
This deserves it’s own post one day, but what’s helped me plan for this trip is that I have someone in my corner: my Mom-in-law. Indeed, my husband cheers me on and so does everyone I’m close to, however, my mom-in-law makes sure we cater for me (and her grandson). She notices when the list doesn’t include snacks for me, or treats we can eat. In fact, for this trip, she wanted us to plan all the meals around what we can eat.
Usually, when we go away, the meal plan is created and I fit in around it. But this trip is created around a grain-free diet and we are packing glutenous extras as a side.
So, what I’m trying to say is that you should take note of anyone who really wants to make your life easier on this journey, because it make s a huge difference.
